Mauli’s achars got a kick off in 2017, when pickles made at home had a demand. Then the family started making them for the market seeing the response. Today the demand has risen to the extent that 4-5 quintals of pickles are made annually. The pickles are mainly mango pickles from their own orchards in Malihabad. The recipes are those of Mauli’s grandmother (Nani), which her mother has preserved and follows them to make the pickles. They are the popular oil free pickles like hing ki achari, sweet noncha, meethi chutney, found in homes in UP. They are made with local Dusheri, Chausa and Kalmi mangoes grown in the Malihabad mango belt. A small amount of winter pickles like lemon and & gobhi- gajar pickles are also made. But the mango pickles are the bulk of production.

The pickles are now made by Mauli’s mother, following the recipes to detail and observing all the norms from spice measures, cooking in the sun and following the hygienic practices to preserve the pickles with any additives or preservatives. She is assisted by 4-5 women for the preparatory phase and bottling. The USP of these pickles is that they are without oil and they mature and seasoned in the sun. They source organic spices and use turmeric from their own farm. Every year fresh batches are made in the mango season in May and then marketed through local contacts and organic product stores. Even Vikas Khanna the celebrated international chef said in a video that the Achari pickles taste good.Mauli and her mother are  open to the idea of having pickle making sessions for people who want to learn her grandmother’s recipes.
